Die Lebensmittelchemie präsentiert sich heute als ein multidisziplinäres Fach, sowohl übergreifend auf Fächer außerhalb der Chemie, als auch innerhalb der chemischen Fachgebiete. Dieses Lehrbuch wird diesem interdisziplinären Anspruch gerecht: Ausgehend von der stofflichen Zusammensetzung der Lebensmittel werden Zusammenhänge zwischen charakteristischen chemischen Strukturen, den Inhaltsstoffen und deren physiologischer Wirkung anhand konkreter Beispiele beschrieben. Die Hauptnährstoffe, Vitamine, Farb- und Aromastoffe werden gut strukturiert in Vorkommen, Chemismus und physiologischer Bedeutung sowie hinsichtlich analytischer Fragestellungen beschrieben. Aber auch Lebensmittelkonservierung, Zusatzstoffe und 'Freie Radikale', die häufig als Produkt von Redox-Reaktionen in biologischen Systemen entstehen, kommen nicht zu kurz. Dieses Buch richtet sich in erste Linie an Studierende der Ernährungswissenschaften, der Lebensmittelwissenschaften und verwandte Disziplinen.
