    Content: La cuisine d'Istanbul symbolisait la richesse et le perfectionnement de la cuisine ottomane au XIXe siècle. Elle représentait particulièrement la culture culinaire du palais ottoman et en même temps les habitudes culinaires de ses divers habitants, musulmans, chrétiens, juifs. Elle reflétait aussi les différents héritages culinaires: nomade turc, médiéval arabe, seldjoukide, byzantin. Cette thèse vise à distinguer les continuités et les ruptures dans la culture culinaire d'Istanbul au XIXe siècle en comparaison au passé. L'alimentation, la cuisine comme espace, les ustensiles de cuisine, les chefs cuisiniers, les plats, le repas, les techniques culinaires et les manières de table constituent les thèmes principaux. La cuisine d'Istanbul qui transparaît dans les livres de cuisine et les sources comptables du Palais ottoman au XIXe siècle, est essentiellement la continuation de la culture culinaire ottomane des siècles précédents. Mais en même temps, elle révèle des distinctions culturelles. Ces nouveautés apparurent, consécutives aux changements politiques, sociaux et économiques connus par l'Empire ottoman à partir des années 1830. L'adoption des manières de table de style occidental, l'adaptation partielle de certaines techniques culinaires françaises, la diffusion de nouveaux ingrédients surtout des végétaux d'origine américaine et l'apparition des nouveaux moyens de sociabilité autour du repas constituent certains changements qui ont été discernables dans la culture culinaire d'Istanbul au XIXe siècle
    Content: Istanbul's cuisine symbolizes the richness and the sophistication of Ottoman cuisine in the 19th century. It represents particularly the culinary culture of the Ottoman palace and at the same time culinary cultures of its various residents like Muslims, Christians and Jews. It embodies also various culinary heritages: Turkish nomadic, medieval Arab, Seljuk and Byzantine. This thesis aims to study and distinguish the continuities and ruptures in 19th century Istanbul's culinary culture in contrast to the past. Food ingredients, kitchen organization and utensils, chefs and cooks, meals and culinary techniques as well as table manners constitute the main topics. Istanbul's cuisine described in cookbooks and in Ottoman palace kitchens account registers of the 19th century is basically the continuation the Ottoman culinary culture of the previous centuries. But at the same time it reflects culinary distinctions. These novelties emerged due to the changes happened in Ottoman politics and economy since 1830's. The adoption of European table manners, the adaptation of some French culinary techniques, the diffusion of new food ingredients especially vegetables natives of Arnericas and the emergence of new ways of sociability around the food constitute some of the changes that were discernable in 19th century Istanbul culinary culture
