Abstract:
L'analyse des usages alimentaires pouvait se faire à trois niveaux : celui de l'économiste et du diététicien qui rapportent une comptabilité générale de la production au nombre et à l'âge des consommateurs, calculent le volume des rations, leur valeur calorique, la combinaison des aliments protecteurs avec les protides, glucides, etc. Ces considérations ne sont sûrement pas étrangères aux Nord-Africains des xviii e et xix e siècles qui, sans les traduire dans un vocabulaire savant ni peser leurs repas, se préoccupent cependant de manger à leur faim. C'est ce niveau d'analyse qui a été proposé, ou au moins privilégié, pour l'enquête sur la consommation.
