Abstract:
O presente artigo apresenta um panorama histórico da evolução do processo de irradiação de alimentos no Brasil, analisando elementos fundamentais que contribuirão para decisões futuras de novos investimentos e o uso em larga escala dessa técnica em todo o país. Esta revisão traz informações precisas de todas as questões regulatórias nacionais estabelecidas nas últimas décadas, introduzindo e discutindo leis, regulamentos e resoluções emitidas por várias entidades, dentre elas o Governo Federal, a Agência Nacional de Vigilância Sanitária e o Ministério da Agricultura, Pecuária e Abastecimento. O artigo fornece ainda uma descrição das técnicas de irradiação mais utilizadas e um breve histórico de sua aplicação no setor industrial, explorando as implicações do cenário social e as percepções dos consumidores. Este trabalho de pesquisa tem por objetivo fornecer uma perspectiva mais ampla e abrangente dos problemas que desafiam a comunidade científica proporcionando novas reflexões sobre eventos passados, limitações atuais e possibilidades futuras. Apesar de todos os benefícios para a saúde pública (segurança do alimento), ganhos econômicos (comércio exterior) e benefícios sociais, no Brasil a técnica ainda é subutilizada pelo mercado interno e incompreendida pela população. Novos avanços tecnológicos apresentam oportunidades consideráveis e cabe à comunidade científica estabelecer um programa de comunicação constante, informando produtores, indústria e consumidores.
