Kann man (guten) Geschmack lernen? Weinverkostungen legen diese Vermutung nahe. Für Jürgen Dollase, hier zuletzt "Kopf und Küche" (ID-G 51/15), ist dies eine Sache des regelmäßigen Schulens des eigenen Gaumens. Der eigentlichen Schule werden physiologische und psychologische Grundlagen des Schmeckens vorangestellt. Nun werden anhand von Zusammenstellungen auf Portionslöffeln die einzelnen "Lektionen" vorgestellt. Entscheidend ist für Dollase das Zusammenspiel unterschiedlicher Aromen, Temperaturen und Texturen im Mund. Es folgen "Degustationsnotizen" zur sensorischen Wahrnehmung und Geschmacksentwicklung. Mit einem Zutatenbaukasten und verschiedenen Löffeln von Meisterköchen lässt sich die Schule noch weiter ausbauen. Letztlich wird man nie "fertig" sein. Eine komplexe und spannende Thematik, die allerdings wohl nur ein überschaubares Publikum hat. Das Buch erschien zuerst 2005 (ID-G 16/06) und hat nun moderate Änderungen erlebt (kein Austausch nötig). Das hervorragend ausgestattete Buch ist dort zu empfehlen, wo Dollase für Nachfrage sorgt und andere Bücher von ihm im Bestand sind. (3) Felix Stenert
