Es ist beabsichtigt, mit dieser zusammenfassenden Darstellung der neueren Ergebnisse der Stärkeforschung einem weiteren Personenkreis einen Überblick über den derzeitigen Stand unserer Kenntnisse und Anschauungen von dem Aufbau und den Eigenschaften der Stärke zu vermitteln. Die verschiedensten Arbeitsgebiete der reinen sowie der angewandten Wissenschaft und Technik - Chemie, Kolloidchemie, Biochemie, Botanik, Physiologie, Medizin, Stoffwechsellehre, Ernährungswissenschaft, Nahrungsmitteltechnik und -gewerbe, Klebstoff-, Appreturmittel-, Kunststoff-, Papier-, Textil-, Gießerei-Industrien, Gärungstechnik, um die wichtigsten zu nennen - alle haben mehr oder weniger ausgeprägte Berührungspunkte mit der Stärke. Die große Anzahl der über die Stärke und deren Umwandlungsprodukte sehr verstreut erscheinenden und außerdem zuweilen widerspruchsvollen Arbeiten erschwert die Übersicht für denjenigen, der die Original Literatur nicht laufend zur Verfügung hat. Und doch ist die Kenntnis von den in den letzten zwei Jahrzehnten auch auf diesem Arbeitsgebiet der Forschung erzielten Fortschritten für die verschiedensten Einzelfragen von grundlegender Bedeutung, zumal die von zahlreichen Forschungskreisen erarbeiteten Anschauungen in zunehmendem Maße zum Verständnis der Eigenschaften der Stärke und ihren Derivaten beigetragen haben, eben auf Grund der Vorstellungen, die über die chemischen und physikalisch-chemischen Bauprinzipien entwickelt worden sind. Nach Aufforderung von verschiedenen Seiten habe ich mich daher entschlossen, die seit längerem angesammelten Unterlagen über das Arbeitsgebiet der Stärkeforschung zusammenzustellen, wobei mehrere Teilgebiete absichtlich knapp gefaßt worden sind, um den Umfang nicht allzusehr ausweiten zu müssen.
