Abstract: Primäre Ursache für den Verderb von Lebensmitteln sind Mikroorganismen, die über Rohmaterialien oder über Kontaminationen im Verlauf des Herstellprozesses in das Produkt gelangen. Der Beitrag informiert über die Methoden zur Keiminaktivierung beim thermischen Behandeln von Lebensmitteln. Je nach Intensität der thermischen Behandlung werden die in einem Produkt enthaltenen Mikroorganismen vollständig oder teilweise abgetötet. Abnormale Inaktivierungskinetiken werden im Vergleich zum loglinearen Inaktivierungsverlauf beschrieben. Abschließend werden Verfahren zur Erfassung von Produktveränderungen im Zusammenhang mit dem gesamten Zeit‐Temperatur‐Profil dargestellt.
