Content: Trace elements are involved in almost every biochemical process in body cells, and inadequacy or unbalance of trace element supply consequently affects a number of physiological functions. Recently developed and improved analytical techniques have strongly contributed to an increased understanding of the role of trace elements for health and disease. This publication gives an excellent overview of the present knowledge concerning their significance in a number of conditions. The specific problems in evaluating trace element intakes and status are highlighted. An adequate nutrient supply is particularly important in periods of growth, especially for infants, children and pregnant women. Improvement of trace element status through food fortification or supplementation is another central theme of this volume. Moreover, the biochemical and epidemiological evidences that they play a role in the prevention of coronary heart disease, cancer and osteoporosis are discussed. To keep track of the exciting developments in the field of trace elements, this publication is important for nutritionists, dietitians, pediatricians, general practitioners, public health professionals and food technologists alike

Content: As a result of domestication – considered to be the most important cultural development of the past 13,000 years of human history – we depend today on a tiny number of domesticated plant and animal species for our food supply. Nevertheless, people continue to gather food which grows around their homes or they cultivate local varieties of food plants (as well as keep land races of domestic animals). Generally, wild varieties tend to be richer in micronutrients and bioactive secondary metabolites, which are produced in adaptation to local environmental conditions. These metabolites trigger further adaptive responses by producing ‘protective’, bioactive compounds which, when ingested, result in the transfer of protective effects to our organism. The preservation of local knowledge for future generations as well as the identification of new nutraceuticals by means of characterizing plant extracts with potential health beneficial effects are the main objectives of this book. The first part therefore focuses on the ethnobotanical study of local food plants in selected regions of the Mediterranean, i.e. their use as well as beliefs and cultural practices associated with it. The biological-pharmacological effects of these plants on selected (mostly in vitro) targets of the central nervous system and the cardiovascular system make up the second part, highlighting the potential of these plants for developing novel health foods, herbal medicines or local products with beneficial effects on health. Those interested in an integrated approach to the identification of new and health beneficial foods will undoubtedly find this book a valuable source of information and an inspiration for new scientific approaches to this age-old topic

Content: The development of effective preventive and therapeutic measures to control eating and body weight involves basic physiology as well as cognitive and social psychology. The potential of molecular genetics to illuminate brain-behavior relationships became apparent with the discovery of the leptin gene in 1994. At present, molecular methodologies are being integrated with other physiological approaches, resulting in a number of options from which effective therapeutic strategies may evolve. This book highlights this exciting juncture: Fifteen leading experts present brief descriptions of some of the latest developments of the physiology of eating and weight regulation, ranging from endocrine and neural controls to genetics and functional brain imaging. These Frontier chapters are preceded by a general overview that provides requisite background on the physiology of eating as well as a conceptual framework for the Frontier chapters.Due to its special nature, this book will be of great interest to students at a variety of levels, to basic researchers already in the area or new to it, and to researchers and clinicians interested in translational issues
Note: Highlights the cutting edge of physiological research

Content: It is generally accepted that the basic needs of vitamins are covered by the so-called Recommended Dietary Allowances, which were originally established mainly to prevent deficiencies. However, there is more and more scientific evidence accumulating that several vitamins have additional functions, each requiring a different, but usually higher amount than the one set for the prevention of the respective classical vitamin deficiency. Such additional functions include the radical scavenging effect of various antioxidant vitamins or the role of folate in the prevention of neural tube defects. This publication wants to substantiate the relations between the scientific evidence for selected functions and the respective vitamin intake; moreover, as some of the functions in question require several vitamins due to synergistic interactions, attention will also be paid to this aspect.Special measures could in the future contribute to lower public health costs by helping to decrease the incidence of costly chronic diseases: Guidelines advising a much higher intake of fruits and vegetables have already been established to reduce the risk for certain diseases such as some types of cancer and coronary heart disease.Covering a wide spectrum of topics, this publication will not only be of interest to nutritionists, pathophysiologists and epidemiologists, but also to Public Health authorities and food and vitamin manufacturers

Series Statement: Handbook of the history of logic v. 3
Note: With the publication of the present volume, the Handbook of the History of Logic turns its attention to the rise of modern logic. The period covered is 1685-1900, with this volume carving out the territory from Leibniz to Frege. What is striking about this period is the earliness and persistence of what could be called 'the mathematical turn in logic'. Virtually every working logician is aware that, after a centuries-long run, the logic that originated in antiquity came to be displaced by a new approach with a dominantly mathematical character. It is, however, a substantial error to suppose that the mathematization of logic was, in all essentials, Frege's accomplishment or, if not his alone, a development ensuing from the second half of the nineteenth century. , The mathematical turn in logic, although given considerable torque by events of the nineteenth century, can with assurance be dated from the final quarter of the seventeenth century in the impressively prescient work of Leibniz. It is true that, in the three hundred year run-up to the Begriffsschrift, one does not see a smoothly continuous evolution of the mathematical turn, but the idea that logic is mathematics, albeit perhaps only the most general part of mathematics, is one that attracted some degree of support throughout the entire period in question. Still, as Alfred North Whitehead once noted, the relationship between mathematics and symbolic logic has been an "uneasy" one, as is the present-day association of mathematics with computing. Some of this unease has a philosophical texture. For example, those who equate mathematics and logic sometimes disagree about the directionality of the purported identity. , Frege and Russell made themselves famous by insisting (though for different reasons) that logic was the senior partner. Indeed logicism is the view that mathematics can be re-expressed without relevant loss in a suitably framed symbolic logic. But for a number of thinkers who took an algebraic approach to logic, the dependency relation was reversed, with mathematics in some form emerging as the senior partner. This was the precursor of the modern view that, in its four main precincts (set theory, proof theory, model theory and recursion theory), logic is indeed a branch of pure mathematics. It would be a mistake to leave the impression that the mathematization of logic (or the logicization of mathematics) was the sole concern of the history of logic between 1665 and 1900. There are, in this long interval, aspects of the modern unfolding of logic that bear no stamp of the imperial designs of mathematicians, as the chapters on Kant and Hegel make clear. , Of the two, Hegel's influence on logic is arguably the greater, serving as a spur to the unfolding of an idealist tradition in logic - a development that will be covered in a further volume, British Logic in the Nineteenth Century , Preface (D.M. Note: Greek, Indian and Arabic Logic marks the initial appearance of the multi-volume Handbook of the History of Logic. Additional volumes will be published when ready, rather than in strict chronological order. Soon to appear are The Rise of Modern Logic: From Leibniz to Frege. Also in preparation are Logic From Russell to Gdel, The Emergence of Classical Logic, Logic and the Modalities in the Twentieth Century, and The Many-Valued and Non-Monotonic Turn in Logic. Further volumes will follow, including Mediaeval and Renaissance Logic and Logic: A History of its Central. In designing the Handbook of the History of Logic, the Editors have taken the view that the history of logic holds more than an antiquarian interest, and that a knowledge of logic's rich and sophisticated development is, in various respects, relevant to the research programmes of the present day. Ancient logic is no exception. , The present volume attests to the distant origins of some of modern logic's most important features, such as can be found in the claim by the authors of the chapter on Aristotle's early logic that, from its infancy, the theory of the syllogism is an example of an intuitionistic, non-monotonic, relevantly paraconsistent logic. Similarly, in addition to its comparative earliness, what is striking about the best of the Megarian and Stoic traditions is their sophistication and originality. Logic is an indispensably important pivot of the Western intellectual tradition. But, as the chapters on Indian and Arabic logic make clear, logic's parentage extends more widely than any direct line from the Greek city states. It is hardly surprising, therefore, that for centuries logic has been an unfetteredly international enterprise, whose research programmes reach to every corner of the learned world. , Like its companion volumes, Greek, Indian and Arabic Logic is the result of a design that gives to its distinguished authors as much space as would be needed to produce highly authoritative chapters, rich in detail and interpretative reach. The aim of the Editors is to have placed before the relevant intellectual communities a research tool of indispensable value. Together with the other volumes, Greek, Indian and Arabic Logic, will be essential reading for everyone with a curiosity about logic's long development, especially researchers, graduate and senior undergraduate students in logic in all its forms, argumentation theory, AI and computer science, cognitive psychology and neuroscience, linguistics, forensics, philosophy and the history of philosophy, and the history of ideas , Contents -- Preface (D.M. Content: The field of artificial sweeteners is a complex one: each sweetener is unique in terms of its composition and taste, and those allowed by legislation vary according to country. Furthermore, they exist certain controversial issues, i.e. are sweeteners really useful in weight management or as an ingredient for people with diabetes, and do they not, through a subtle biological mechanism, trigger appetite rather than reduce it? This book provides a complete update on all aspects of science about sweeteners. One of the matters discussed is whether there is a difference between ‘natural’ and ‘synthetic’ substances from the point of view of safety. Attention is also paid to new developments and applications of sweeteners, as well as to the usefulness and relevance of low-calorie sweeteners in nutrition and as one aspect of weight control and calorie intake. Lastly, consumer preferences and the differing perceptions, according to geographical regions, of sweetener-containing products are evaluated. The book concludes with a section on world trade rules

Content: In this engaging and spirited book, eminent social psychologist Robert Levine asks us to explore a dimension of our experience that we take for granted - our perception of time. When we travel to a different country, or even a different city in the United States, we assume that a certain amount of cultural adjustment will be required, whether it's getting used to new food or negotiating a foreign language, adapting to a different standard of living or another currency. In fact, what contributes most to our sense of disorientation is having to adapt to another culture's sense of time
Content: Levine, who has devoted his career to studying time and the pace of life, takes us on an enchanting tour of time through the ages and around the world. As he recounts his unique experiences with humor and deep insight, we travel with him to Brazil, where to be three hours late is perfectly acceptable, and to Japan, where he finds a sense of the long-term that is unheard of in the West. We visit communities in the United States and find that population size affects the pace of life - and even the pace of walking. We travel back in time to ancient Greece to examine early clocks and sundials, then move forward through the centuries to the beginnings of "clock time" during the Industrial Revolution
Content: Levine raises some fascinating questions. How do we use our time? Are we being ruled by the clock? What is this doing to our cities? To our relationships? To our own bodies and psyches? Are there decisions we have made without conscious choice? Alternative tempos we might prefer? Perhaps, Levine argues, our goal should be to try to live in a "multitemporal" society, one in which we learn to move back and forth among nature time, event time, and clock time
