Content: The global food-supply chain is vulnerable to threats from a variety of directions. Hence food security and safety remains a hot topic worldwide in academic research arenas and food industry practices. This book describes efforts from academia, government, and industry to counter food terrorism and to protect the food supply against any threat. In addition, it evaluates the global food supply, production capabilities, and food availability during and after disasters. Articles in the book assess food safety emergencies, and the prevention of, and response to deliberate contamination by microbial or chemical substances. Minimization of health and economic risks following a terrorist act or unintentional contamination is likewise discussed. The book also examines novel preservation techniques, methods to produce safe food products, and other concerns for ensuring a stable and safe food supply.
Note: Preface -- NATO-SPS Pilot Study on Food Chain Security: Finding and Recommendations -- Food Safety and Bioterrorism from Public Health Perspective -- Food Safety: the Global Problem as a Challenge for Future Initiatives and Activities.-Solidarity Principle as A System Tool for Mitigation of Flood Impacts / Scope and Effectiveness in Western Balkan Countries: An Issue for Investigation -- Higher Risks of Health Problems for Radio-Contaminated Food Consumption by Human Population.-Chemical Pollutants Threatening Food Safety and Security: an Overview -- Defending the Safety of the Global Food System from Intentional Contamination in a Changing Market -- Establishing Database for Food Products and Ingredients to Strengthen Readiness in Food Terrorism Attack -- An Introduction to Traceability for Processed Foods.-Availability of Shelf Stable Foods During Crises -- Different Mycotoxin Inactivation Applications in Foods and Feeds and Their Inactivation Mechanisms -- Pulsed Electric Field Processing to Better Preserve Health Related Compounds -- Emerging Risks Related to Food Technology.
