Abstract:
Vergleichende Untersuchungen über die lipolytische Aktivität von 10 Stämmen aerober Sporenbildner, von 8 Hefen und von 5 Schimmelpilzen gegenüber verschiedenen Substraten ergeben bei allen 23 Stämmen mit Tributyrin als Substrat positive Reaktionen, mit Leinöl bei 4 Sporenbildnern und 1 Schimmelpilz, mit Kokosfett bei 3 Sporenbildnern, mit Rindertalg bei 2 Schimmelpilzen, mit Schweinefett bei 1 Hefe und 2 Schimmelpilzen und mit Tween bei 4 Sporenbildnern, 2 Hefen und 2 Schimmelpilzen. Die möglichen Ursachen der unterschiedlichen Reaktionen werden diskutiert; es wird auf ihre Bedeutung für Aufklärung und Steuerung lebensmitteltechnologischer Prozesse (Käsebereitung, Fleisch‐ und Rohwurstreifung) mit mikrobiellen Lipasen hingewiesen.
