Abstract: Nondialysable melanoidins have been isolated from the model systems L‐ascorbic acid‐L‐glutamic acid. A comparison with L‐ascorbic acid interactions with glycine and L‐lysine has been made. The influence of reaction parameters on the formation of melanoidins has been studied. Their fractional and spectral characteristics and the kinetic thermodynamic parameters have been discussed.
