The Economic Importance of Fats Nearly half of the 4 million tons of fats which are yearly consumed, fall to the so called visible fats, that means basing on the product weight more than 29 kg per capita. Margarine has the greatest share with 29%, followed by butter with 24%, which has got more and more importance in the last years. The consumption of edible fat has increased, too, whereas edible oil and other animal fats came at a stand‐still. Half of the visible fats is used in private households, especially as spread, but also for frying, cooking and baking. The private household spends the same amount of money for fats as for coffee and tea. The use of fats in the trade handicraft, in the gastronomy, in canteens and in industry has increased. On the producers' side 600 producers operate with a partial oligopolistical structure of the market in case of vegetable fats and with a partial atomistic structure of the market in case of animal fats. The domestic producers achieve an animal turnover of 8 milliards DM with about 40 000 employees and a net product of 1.2 milliards DM. Advertising expenses have increased in all kinds of fats, with the exception of margarine. The price level of fats is considered to be stable. The fat industry has contributed to an increasing export of the food industry. The export involving is manifested more significantly however on the import side. About 60% of the fatty raw material, including the concentrating feeding stuff necessary for milk fat production, are delivered from abroad. The fatty industry depends at a high degree on foreign countries and a free access to the world market is important.

Abstract: Von den jährlich in der Bundesrepublik Deutschland verbrauchten 4 Mill. Tonnen Fetten entfällt knapp die Hälfte auf die sogenannten sichtbaren Fette, das sind auf Basis Produktgewicht pro Kopf mehr als 29 kg. Größter Teilmarkt ist die Margarine mit einem Anteil von 29%, gefolgt von der Butter mit 24%, die in den letzten Jahren an Bedeutung gewonnen hat. Ebenfalls angewachsen ist der Verbrauch von Speisefett, während Speiseöl und sonstige tierische Fette im Verbrauch stagnierten. Die Hälfte der sichtbaren Fette wird im privaten Haushalt verwendet, vorzugsweise als Brotaufstrich, aber auch zum Braten, Kochen und Backen. Der Privathaushalt gibt heute wertmäßig für Fette soviel wie für Kaffee und Tee aus. Die Verwendung von Fetten im Handwerk, in der Gastronomie, in Kantinen und in der Industrie hat zugenommen. Auf der Herstellerseite operieren 600 Hersteller, mit einer teiloligopolistischen Marktstruktur bei pflanzlichen Fetten und einer teilatomistischen Marktstruktur bei tierischen Fetten. Die inländischen Produzenten erwirtschaften mit gut 40 000 Beschäftigten einen Jahresumsatz von 8 Mrd. DM und eine Wertschöpfung von 1.2 Mrd. DM. Werbeausgaben sind mit der Ausnahme von Margarine bei allen Fettarten angestiegen. Das Preisniveau bei Fetten gilt als stabil. Zum Exportwachstum der Ernährungsindustrie hat die Fettwirtschaft beigetragen. Die Außenhandelsverflechtung manifestiert sich aber deutlicher auf der Importseite. Etwa 60% der Fettrohstoffe kommen aus dem Ausland, einschließlich der für die Milchfettherstellung erforderlichen Kraftfutterimporte. Die Auslandsabhängigkeit der Fettwirtschaft ist also groß und ein freier Zugang zu den Weltmärkten wichtig.
